These hoods follow basically the same idea as that for compensating hoods, (not to take air away from the kitchen) – but they use a different procedure: induction generated by the high speed flow of air throughthe hood interior.
The advantage of this system is that the chef does not feel any air current directly.
Given its special characteristics, installation is recommended in particularly cold climates where it would not be possible to tolerate any exchange of air with outside air.
